Our olive oil comes from the Spanish Matarranya — where the ancient kingdoms of Aragón, Catalonia and Valencia meet.
At this historic crossroads, the landscape has remained largely intact. The region was never flattened, irrigated or industrialised.
Its steep terraces, fragmented plots and remoteness have preserved an older way of farming — producing distinctive olive oil in small batches, with full transparency on origin, harvest and pressing.
Our olive groves sit on remote terraces that often cannot be mechanised.
These are not industrial plantations. The trees depend entirely on seasonal rainfall, shaped by wind, altitude, and mineral-rich soils.
Many are centuries old — some over 800 years — cultivated on a small scale without interruption.
The methods used here are dictated by place.
Olives are hand-harvested using traditional tools, gathered in ground nets, and brought in small batches from single groves.
They are taken to our local mill and cold-pressed within hours of harvest.
Like fine wine, this olive oil is shaped by place and refined by the year. Each harvest reflects the conditions of the season — rainfall, heat, wind and the timing of the pick.
The result is subtle variation within a recognisable character.

Clean and smooth on the palate, with gentle sweetness and balance. Aromas of ripe fruit lead into notes of nuts, sun-dried tomatoes and Mediterranean herbs — an oil that brings depth to salads, fish and slow-cooked dishes.
Every bottle is fully traceable, from individual groves and growers through to final pressing and bottling.
